Much Abides

By Alfred Lord Tennyson

Tho’ much is taken, much abides,
and though
we are not that strength
which in old days
moved earth and heaven, that
which we are, we are.
One equal temper of heroic beauty
made weak by time and fate, but
strong in will
to strive, to seek, to find, and not
to yield.

family camping

We spent last week camping with the fam in the mountains. We had a great campsite, great food and great fun! The pictures tell the best story...

And when it was all done, we felt like this...

what's for dinner

This was so good, I had to share it.

Zucchini Pie

1 pie crust, unbaked
Dijon mustard (used all of mine on our camping trip so I used regular mustard and honey)
1/4 cup butter
4 cups sliced zucchini
1 cup diced onion
1/2 cup fresh parsley, chopped
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon oregano, dried
1/4 teaspoon garlic salt
2 cups shredded cheese, I used a combination sharp cheddar and mozzarella
2 extra large eggs, beaten (I used 3 large eggs and added a dash of milk)

Preheat the oven to 375 degrees.

Line a pie plate with the pie crust and brush with Dijon mustard. Set aside.

Melt butter in a large saute pan and add zucchini and onion. Saute for about 8 minutes. Add the parsley, salt, pepper, oregano and garlic salt. Toss to coat. Cool slightly and then add cheese and eggs and mix. Pour into the prepared pie crust and bake for about 25 - 30 minutes. Cool slightly before serving.

I cut up the fruit I had in my fridge while it was baking and that was that! So easy and SOOOOO good!

peaches

I am thankful to have the canning season under way and already looking forward to it being over! It is one of those things that is extremely satisfying and a whole lot of work. Also, it comes at a time when I find myself fairly worn out. Thankfully, yesterday, for a 2nd round of peaches, I had some of my favorite helpers...
